Chef Vincent Wallez
Born in the French city of Bayonne, at the confluence of the Adour and Nive rivers, Vincent Wallez followed in his father’s footsteps and became a chef. With much determination, Wallez began his culinary career as a trainee at the celebrated Parisian restaurant La Tour d’Argent, under the tutelage of Chef Manuel Martinez. His dexterity in the kitchen was soon apparent and his talent allowed him to travel and work in star-studded kitchens in France, and gourmet restaurants in Russia, Mexico and the Caribbean.
Today, Chef Wallez delights guests and dinners at La Samanna drawing inspiration from his heritage, his travels, and a long list of Michelin-starred mentors to create delicious and visually inspiring dishes.
Featuring classic French flavours and techniques, his presentations are modern –mixing shapes, colours and textures– to provide a true culinary journey for all who dine at La Reserve.
